I had to share this. My kiddo loves books, he gets is honestly I also love books! We go to story time every week and this week he wanted to have his own story time. I love it when I catch this awesome moments. He read the whole book to his little astronauts. <br />

I have a new obsession, vegan pudding. </div>

It is amazing. </div>

I've never really been a pudding fan so T didn't even know what it was. Then we saw the display, you know the one with the brightly colored packages with all kinds of junk in them. Of course he asked for it but I looked at the ingredients and said told him sorry it didn't have good ingredients in it. He was bummed but he's used to mom saying no at the grocery store.<br />

I was on a mission find a healthy, easy, vegan, trying to cut back the dairy, recipe.<br />
<br />
I typed vegan pudding in google and found a ton. I started looking through the links. I wanted something basic that I could add to if I wanted. I read a bunch and decided to go with <a href="http://vegetarian.about.com/od/desertrecipes/r/vanillapudding.htm">this one.</a> <br />

It was quick, easy and I always have these on hand. It is delicious. The first batch was gone as soon as it was chilled. T loved it, love isn't even the right word. He devoured it and asked if he could eat it for every meal hah!<br />

I'm not going to reprint the recipe, you can check it out <a href="http://vegetarian.about.com/od/desertrecipes/r/vanillapudding.htm">here</a>. I only made a few changes.<br />

I used coconut milk, its what we had. I also threw in some cinnamon. It made four of these little bowls, I threw some blueberries in the bottom of two of them. So good! I can't wait to get this batch chilled and eat up! <br />

Well you can. T wanted a rocket ship valentine and his teachers only requirement was we use a paper sack. Hmmm how do you turn a brown paper bag into a rocket. I knew I wanted something that I could easily change out the art. I started first with just the twine and art work. Lightly grease two large light metal baking sheets.</div><span style="font-family: inherit;"> </span><div style="font-family: inherit;">Mix together sugars, oil, milk and corn startch in a mixing bowl. Use a strong fork and mix really well, for about 2 minutes, until it resembles smooth caramel. There is a chemical reaction when sugar and oil collide, so it’s important that you don’t get lazy about that step. Mix in the vanilla, lemon juice and zest. </div><span style="font-family: inherit;"> </span><div style="font-family: inherit;">Add 1 cup of the flour, the baking soda and salt. Mix until well incorporated. Mix in the rest of the flour. Add in white chocolate chips and blueberries. My dough was a little runny so I did add a little more flour till it was the right consistency. </div><span style="font-family: inherit;"> </span><div style="font-family: inherit;">I used a cookie scoop. They will spread just a bit. Place on a baking sheet and bake for about 12 minutes until they are just a little browned around the edges. We have just had one of those days around here today. I feel like all I did all day was yell and clean up messes. I sat down once earlier today and thought really, can it get any worse. Then I saw something a friends Facebook, a friend of a friend's house burnt down 2 weeks ago and then this morning she went into labor and had a baby 10 weeks early. So yes it can get worse.<br />

I instantly felt horrible, here I am complaining over meaningless nothingness. I am very lucky, we are all healthy, we have a nice house, my husband has a good job. We are good. I needed a perspective today. I really need to learn to be more thankful and grateful for what I have. Have a wonderful evening....<br />

It's that simple. I go though phases where I will eat better but I always seem to come back to eating junk. I would live off of pizza, pasta and chips. I know how I should eat, I know what I should eat and appropriate portions, but I don't I eat pizza and tortilla chips covered in cheese. I don't really like resolution's though I never keep them, I wanted something more, something to keep me accountable. I started thinking about all the thing I wanted to do this year, things I wanted to accomplish. I started making a list, I love lists although I never use them I love to make them! </div><div class="separator" style="clear: both; text-align: left;"><br />

So last night I sat down and really worked on my list and there were about 24 items on there. I knew if I thought hard enough I could make the list a little longer and do 31 wonderful things this year. Lil' man is 3 years and one month old and he refuses to do the following...<br />

1. Wear underwear. He just flat out refuses we have about 15 pair, hes picked them all out in various designs. <br />

2. Sit on a potty. He won't do it. We've tried to bribe him with everything under the sun. <br />
<br />
3. Pee on the potty, obviously if he won't sit on it he won't pee either. <br />

For Christmas Santa brought him very special Star Wars underwear. He said if Santa brought him Star Wars one's he'd wear them HAH! Yeah right. Today we are trying something else. I let him decorate his potty in Star Wars stickers. This is something I would have never considered before, oh the things you resort do. Right now hes sitting on it but it took 20 minutes of crying and some bribery to get him to sit. <br />

For those of you who don't know my husband is an over the road truck driver. He gets "weekends" off, which actually means he gets home Friday nights and leave Sunday afternoon. We love holidays around here because that means daddy is home more! Its hard sometimes but its the only life we've ever known. He works really hard for our family and that allows me to stay home with my little guy!<br />

This week we are going to talk about Blind Pilot. They are one of T's and my favorite band. They are played around this house daily and T asks for them by name a lot. I don't quiet remember how I discovered them, I think I randomly found them on i-tunes one day and it was love at first listen. I have actually saw them live, they opened for The Decemberists last year on their Hazards of Love Tour, one of the best concerts ever by the way. <br />
<br />
On to the music....<br />
I would call them an Indie Folk band, they have a traditional sound that I love. T's favorite part of the band is the banjo and upright bass, which by the way he thinks Santa is bring him those 2 things for Christmas HAH. If you like, Avertt Brothers, The Decemberists, Mumford and Son, any bands along those lines you will love Blind Pilot. <br />
They have one cd, 3 Rounds and A Sound with another one coming out this September called We are Tide. They also have an ep on i-tunes with a cover of Gillian Welch's "Look at Miss Ohio" which is amazing! <br />

Taco Night, or as T calls it, Taco Bell dinner. He loves Taco Bell and we do eat there occasionally but at least once a week we have tacos. <br />
Since we don't really eat meat, my taco filling is a little different. I use rice with some lovely items mixed in. This week we had brown rice with corn and edamame. I usually throw black beans in there also but I was out =( I use this as taco filling for me and I make a bowl for T. The thing I like about this recipe is you can add anything you want. This week I just made the basic and at the end I will give you some possible additions. So here is the basic recipe<br />

Confetti Rice<br />
1 TBS butter or oil <br />
1 cup edamame<br />
1 cup corn fresh or frozen<br />
1 packet taco seasoning or more to taste<br />
2 Cups cooked brown rice<br />
1/2 Cup Black beans drained and rinsed <br />
<br />
Heat oil in pan, add edamame and saute' for a few minutes. Add corn and taco seasoning next and cook for about five minutes. Once the edamame and corn are fully heated add the rice and black beans and cook for about 10 minutes. Taste and add more taco seasoning if needed. Corn and edamame will brown slightly. Use as taco filling or make a rice bowl add toppings eat and enjoy! <br />

Pretty simple I know but we eat this at least once a week around here, its a great way to use left over rice. Some great additions to your taco or rice bowl would be, black olives, salsa,sour cream ( we use tofutti) lettuce, tomatoes, onions, cheese or anything else you can think of. For this one we added onion and cheese. This can also be vegan if you omit the cheese or use soy or my favorite Daiya Cheese. <br />
